About the Producer

This rare Papayo varietal coffee is produced by Wilton Benitez at El Paraíso 92 farm in Cauca, Colombia. The Papayo varietal gets its name from the unique shape of the coffee bean, which is elongated and shaped like papaya fruit. The Papayo varietal also tends to be fruit-forward with a vibrant flavour profile.

The innovative thermal shock process utilized by Wilton Benitez unlocks the full potential of these beans. By rapidly shifting temperatures during fermentation, the process yields a highly fruit-forward cup with a syrupy body and sparkling mouthfeel. 

Granja El Paraíso-92 is a family-run farm known for its award-winning, specialty coffees—including Java, Bourbon Pink, Geisha, and more. They employ advanced techniques like terracing, drip irrigation, shade systems, and lab-based nutrition management to optimize quality. With in-house microbiology and quality labs, they meticulously process each coffee: starting with selective harvesting, sterilization, and tailored anaerobic fermentation using specific microorganisms. After pulping, a second fermentation follows, finishing with a hot-cold water treatment to enhance flavor and aroma.
